Kansas City BBQ Beans

Ingredients
- 2 cans baked beans, 28 oz each
- ½ lb bacon, diced
- 1 cup chopped smoked brisket or pulled pork
- 1 small onion, diced
- 1 green bell pepper, diced
- ½ cup Dillightful BBQ Sauce
- ¼ cup brown sugar
- 2 tbsp molasses
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
Instructions

Heat the oven or smoker to 325°F. Cook the bacon in a cast-iron skillet until partly crisp; remove half for garnish.

Cook onion and bell pepper in the bacon drippings for 5 minutes until softened.

Stir in beans, smoked meat, sauce, brown sugar, molasses, mustard, vinegar and paprika.

Cook uncovered for 45–60 minutes, stirring once, until bubbling and thick around the edges.

Rest 10 minutes, top with reserved bacon and adjust with a splash of pickle juice if you want a brighter finish.
