Dillightful Smoked Ribs
Sticky, smoky and glazed with pickle-powered Kansas City sauce.
Ingredients
- 2 racks St. Louis–cut pork ribs
- 2 tbsp yellow mustard
- ⅓ cup Kansas City BBQ rub
- ½ cup apple juice
- ¼ cup dill pickle juice
- 2 tbsp apple cider vinegar
- 1 cup Dillightful BBQ Sauce
- 2 tbsp honey
- 2 tbsp unsalted butter
Instructions

Heat the smoker to 250°F using hickory, oak or apple wood. Remove the membranes and trim loose fat from the ribs.

Coat both sides lightly with mustard, apply the rub evenly and let the ribs sit 20 minutes until the seasoning looks damp.

Smoke bone-side down for 3 hours. Combine apple juice, pickle juice and vinegar and lightly spritz after the first 90 minutes, then every 45 minutes.

Place each rack meat-side down on foil with butter, honey and a splash of spritz. Wrap tightly and cook 60–90 minutes until the racks bend easily.

Unwrap, return bone-side down and brush with Dillightful BBQ Sauce. Smoke 20–30 minutes until tacky. Rest 15 minutes before slicing.
