Kansas City Cheesy Corn
Creamy, cheesy corn with smoky bits and black pepper.

Ingredients
- 6 cups corn kernels
- 8 oz cream cheese, cubed
- 1½ cups shredded sharp cheddar
- ½ cup whole milk
- 2 tbsp butter
- 1 cup diced smoked ham or brisket
- 1 small jalapeño, finely diced
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper
Instructions

Heat the oven or smoker to 350°F. Melt butter in a large cast-iron skillet and cook the jalapeño for 2 minutes.

Add corn and smoked meat and cook 3–4 minutes until warmed and lightly browned.

Stir in cream cheese, milk, garlic and paprika until smooth, then fold in 1 cup cheddar.

Top with remaining cheddar and cook uncovered 20–25 minutes until bubbling and browned at the edges.

Rest 10 minutes before serving. Thin with a splash of milk if needed and finish with black pepper.
