Dillightful BBQ Chicken Pizza

A crisp, cheesy barbecue pizza loaded with sauced chicken, smoky bacon, red onion and tangy dill pickles.

Ingredients

  • 1 lb pizza dough, room temperature
  • ¾ cup cooked shredded chicken
  • ½ cup Dillightful Dill Pickle Kansas City BBQ Sauce, divided
  • 1½ cups shredded low-moisture mozzarella
  • ½ cup shredded smoked Gouda or sharp cheddar
  • ⅓ cup thinly sliced red onion
  • ⅓ cup chopped cooked bacon
  • ⅓ cup well-drained dill pickle slices
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh parsley or green onion
  • Crushed red pepper or sliced fresh jalapeños, optional
  • 2 tbsp Dillightful BBQ Sauce for finishing, optional

Instructions

    Place a pizza stone or inverted baking sheet in the oven. Heat to 475°F for at least 30 minutes.

    Toss the shredded chicken with ¼ cup Dillightful BBQ Sauce.

    Stretch the dough into a 12-inch round on parchment paper. Brush the outer crust lightly with olive oil.

    Spread the remaining ¼ cup sauce over the dough, leaving a ½-inch border. Add half the mozzarella, then the chicken, smoked Gouda, red onion, bacon and remaining mozzarella.

    Transfer the pizza and parchment to the hot stone or baking sheet. Bake 10–12 minutes, then add the well-drained pickle slices and bake 2–3 minutes more, until the crust is golden and the cheese bubbles.

    Finish with parsley or green onion, optional peppers and a light drizzle of warm Dillightful BBQ Sauce. Slice and serve immediately.

    For the grill, set up for indirect cooking at about 450°F. Cook the assembled pizza on a preheated pizza stone with the lid closed for 10–14 minutes, rotating once if needed.
