Smoked Pork Belly
Caramelized pork belly bites with crisp edges and sticky sauce.

Ingredients
- 3 lb skinless pork belly, cut into 1½-inch cubes
- ¼ cup BBQ rub
- 2 tbsp brown sugar
- 1 cup Dillightful BBQ Sauce
- ¼ cup honey
- 4 tbsp unsalted butter
- ¼ cup apple juice
- 1 tbsp dill pickle juice
Instructions

Heat the smoker to 250°F with hickory or cherry wood. Season the pork belly cubes evenly with rub and brown sugar.

Arrange cubes on a wire rack with space between them. Smoke 2–2½ hours until mahogany-colored.

Transfer to a foil pan and add sauce, honey, butter, apple juice and pickle juice. Toss gently and cover tightly.

Cook covered for 60–75 minutes until tender, then uncover and stir carefully.

Smoke 20–30 minutes more until the sauce reduces to a sticky glaze. Rest 10 minutes before serving with toothpicks.
