Smoked Salmon
Flaky salmon with lemon, dill and a kiss of wood smoke.
Ingredients
- 1 side salmon, 2–2½ lb
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tbsp brown sugar
- 1 tsp coarse black pepper
- 1 tsp garlic powder
- Zest of 1 lemon
- 2 tbsp chopped fresh dill
- Lemon wedges
- Dillightful BBQ Sauce, optional for serving
Instructions

Remove pin bones and pat the salmon dry. Mix salt and sugar, season the fish and refrigerate uncovered for 45 minutes.

Rinse off the cure, pat dry and brush with oil. Season with pepper, garlic, lemon zest and dill.

Heat the smoker to 225°F with alder, apple or cherry wood. Place the salmon skin-side down on a lightly oiled rack.

Smoke 35–55 minutes until the thickest part reaches 135–140°F and flakes with gentle pressure.

Rest 5 minutes and serve with lemon. Offer Dillightful BBQ Sauce on the side rather than covering the delicate smoke flavor.
