Smoked Jalapeño Poppers

Ingredients

  • 12 large jalapeños
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar
  • 2 tbsp chopped green onion
  • 1 tsp BBQ rub
  • 12 thin bacon slices, halved
  • ⅓ cup Dillightful BBQ Sauce
  • 1 tbsp honey

Instructions

    Heat the smoker to 275°F. Halve the jalapeños lengthwise and remove the seeds and membranes; leave some membrane for extra heat.

    Mix cream cheese, cheddar, green onion and rub until evenly combined.

    Fill each pepper half without overstuffing, then wrap with half a bacon slice and place seam-side down.

    Smoke 35–50 minutes until the pepper softens and the bacon is browned. Increase the heat to 350°F if the bacon needs crisping.

    Mix sauce with honey, brush lightly over the poppers and cook 5–10 minutes more. Cool several minutes before serving.
